Bryan Sullivan is the Baltimore chef of the Harbor Club at Pier 5 Hotel in Charm City ... and he's proud of it along with his culinary staff of Baltimore International College graduates. Now he's ready to take his food show on the road to the James Beard House in New York City. His date in NYC is August 18, but he invited friends, family and fans to a dinner tonight to show off the menu that will be the same that he serves at the famous culinary landmark. If he can replicate the first course of a lemon thyme infused rockfish and his true-to-the-bay Maryland crab cake that was served with a celery root chowder and charred tomato relish -- he will be the darling of the Beard Foundation members.
I have to thank Celeste Corsaro of Baltimore Eats who extended me the gracious invite and my Baltimore columnist Randi Rom who guided me around the room and introduced me to Susan Duchin and Denisa Protani with the Balitmore Sun and Randi's friends, mother/daughter Janice and Shelley. Shelley showed off her Nordstrom trained fashion skills like I might try in identifying a fine wine ... she pegged my tie as a "vineyard vines" with only a single glance. One more trip around the room and I found two food broker friends from Eden & Tye: John Brewer and Jenny Gibbs. One more turn and I said hello to the Baltimore Zagat editor Marty Katz. My social skills were exhausted and I enjoyed the rest of the Sullivan created Maryland dinner as I held onto my wine glasses with all my might lest they be cleared from the table. For a meal so regionally intense, I wish Bryan could have tasted some of the medal winning wines from the Atlantic Seaboard Wine Competition. I think he might have found some fine pairings from Maryland medal winners at Bordeleau, Black Ankle, Elk Run and Sugar Loaf Mountain. Then maybe the wine from Alsace (although quite nice) could have stayed in Alsace.
In the end, the dinner was a delicious tribute to the hard working spirit of Baltimore and to the culinary talent and drive of soon to be Beard House chef Bryan Sullivan.
