Take A Look at the 'Latest Dish'

The most read column in Foodservice Monthly is the one that belongs to the dean of reporting on the restaurant scene in Washington DC ... Linda Roth Conte. Before blogs, before the obsessive food network and reality television, before food sections became foodie world ... you know when it was a laundry list of homemaker recipes and grocery ads ... Linda was keeping tabs on Washington chefs and restaurants. What's cool is that Linda is just as relevant in today's world as she was 20 years ago (we don't count much beyond that). I thought as we put together the June issue, I would showcase Linda's column.

Tasty Trends Tea Off at NRA Show

Tasty Trends – the NRA Show Round-Up: The country’s largest restaurant show was buzzing with tea – hot tea, cold tea, flavored tea, fusion tea, organic tea, hand-crafted tea. Tea drinkers now have their day – or year at least – as tea drinks appear to be giving coffee drinks a run for the money. Thirty-two booths showcased tea, and more offered tea-making equipment. The PR firm (not mine) for Mighty Leaf Tea Company got my attention and my vote for best display. My favorite item of the show was a tie: Cholives – chocolate olives for chocolate martinis or dessert garnish, and Bagel O’s – pre-filled (think flavored cream cheese) bite-sized bagels that appear to be the quintessential bagel holes. The most useful item was the Wine Doggy Bag, especially since regulations in DC are changing so guests can take home unfinished bottles of wine in a sealed bag.

It’s official. The St. Regis Washington, DC has restaurant star power, partnering with internationally acclaimed chef, Alain Ducasse, to open “Adour by Chef Alain Ducasse” restaurant on property. Don’t try to translate into English, as Adour is named after a river in southwestern France where Ducasse was born. The St. Regis star power extends to New York-based award-winning architect, David Rockwell, and his Rockwell Group as the design firm for Adour. A September opening is planned.

Mauricio Fraga-Rosenfeld plans to expand his burgeoning empire when he opens Peruvian-themed Yaku in the Odyssey condominium building in the Courthouse Square sector of Arlington. Yaku, which means “water” in Quechua, the Inca language, will serve Chinese-influenced Peruvian dishes, called “chifa.” Chef Gisela Laos was imported by Mauricio from Peru where she ran a culinary school. Never one to be satisfied, he also plans to open in Glover Park’s Grog & Tankard space. Next on his list? A national rollout of a new concept – stay tuned.

Cure Bar & Bistro is the new name of the spot in the Grand Hyatt Washington hotel (not Ardenz which I had previously reported) where Butler’s Cigar Bar used to be. Cure is open and well.

Bill Thomas will open Breadsoda in Glover Park space on Wisconsin Avenue where my Bakery & Café used to be. Breadsoda is a slang term for beer. Guess what they will feature? Yes, beer , wine and coffee drinks –as well as sandwiches. Thomas also owns Bourbon in Glover Park and in Adams Morgan.

We’ve got all kinds of bars in this region – coffee bars, wine bars, dessert bars. Now we have a mozzarella bar. Chef Domenico Cornacchia, formerly of Café Milano, has opened Assaggi, an Italian restaurant as well as mozzarella bar – in downtown Bethesda where Centro used to be. The mozzarella is from California and (in the spirit of supporting local farmers) Virginia’s Blue Ridge Mountains, as well as Italy. Produce and meats are also from local farms in Pennsylvania’s Amish country.

Andy Seligman, owner of The Angry Inch Saloon in Adams Morgan is getting a fresh look as well as a new name. The popular bar will become True Story by mid-summer (according to plan) with a new décor by up-and-coming designer John Hutson, who also did the design for Seligman’s other place in Adams Morgan, Grand Central.

Fire and water translates to a new restaurant at an old firehouse. Old Engine Co.12 on North Capitol Street was sold to Brian Brown, who plans to turn the three-story 10,000 square-foot space into 2020 Martini. This is a concept developed by Twyla Garrett of Cleveland-based Garrett Entertainment Corp. Building renovation cost is expected to peak around $2.4 million, while another $1 million is slated to build the restaurant. The restaurant will be similar to Garrett’s Cleveland concept -- a restaurant and martini bar serving brick-oven pizzas, pasta and sushi. Sushi and pizzas will be served via conveyor belt. A coffee lounge is part of the formula, as is a rooftop deck. The 30-foot martini bar will have water running through it and fire atop it – hence the fire and water theme. An opening date has not been determined.

Ye old’ Childe Harold off Dupont Circle is now Darlington House. It offers an Italian-influenced New American menu. The upstairs salon focuses on dinners; downstairs street level (the cantina) includes an outdoor patio with deluxe bar fare. Owner Fabio Beggiato also owns Sesto Senso, Andalu and Cleveland Park Bar & Grill. He plans to open a third-floor library lounge that will offer cappuccino, pastries and WiFi.

Bodega, a tapas-focused Spanish restaurant, opened where Manhattan Café used to be on M Street in Georgetown. It offers tapas and traditional paellas and is owned by the same Moroccan family of the nearby News Café.

Learning how to cook is the first step, be it a profession or a hobby. That’s the plan for veteran L’Academie de Cuisine instructors Susan Holt and Susan Watterson. They plan to start their own school for the public, CulinAerie (pronounced “culinary”) this fall. The Logan Circle area facility will offer two kitchens with flat screen TVs and customized workstations. Will a “training restaurant” be the next step – a la the CIA?

Joan Hisaoka Memorial and Celebration Service

Today is the memorial and celebration service for Joan ... I am in Chicago and won't be able to make it back in time. But that doesn't mean I can stop thinking about her -- we never traveled together but we had some common experiences including Machu Picchu.

When I traveled to Iceland, I had an opportunity to see the northern lights one evening and took this foto handheld around midnight. I loved telling Joan about the experience and sharing my fotos with her.

There won't be any show posts today or any other for that matter ... this is Joan's day ... the show recap will appear tomorrow.

Here's that wonderful eskimo proverb again:

NRA Announces Conserve Initiative

The National Restaurant Association today launched their Conserve initiative, which will provide education, resources, tips, tools and best practices on how the nation's nearly one million restaurants and foodservice locations can conserve natural resources and become more sustainable.

The Web site will serve as a gathering place for information and resources useful to the single operator as well as the chains. Dawn Sweeney, president and CEO of the NRA made the introduction with Niki Leondakis, COO of Kimpton Hotels and Restaurants, Tom Coba, COO Subway Restaurants and Gale Gand, Chicago restaurateur and food television celebrity. With a hotelier, a chain leader and a concerned independent operator, Conserve's opening announcement showed the universality of the quest for a healing treatment of the environment. We are all in this together.

NRA Show Takes Off in Chicago (Live from Chi-Town)

I love going to Chicago every year for the National Restaurant Association Show. I'm one who's glad that the deal to move the show to Las Vegas fell through and the show signed up for another round of May shows in this now great food town.

The show opened this morning at 9 a.m. and it's already kicking with people, products and food. I stopped by first to see my friends from Deli Brands of America -- based in Baltimore. Marketing guru Eva Jenson was manning their first-time NRA booth with corporate chef Bryan Bernstein and company president Jeff Saval.

I tried to visit the folks from Domino Foods who have joined forces with the NutraSweet company to show off their rainbow of familiar other "brand" colors in the sugar substitute market: pink, blue and yellow. Soon, coming to a store and restaurant near you will be their yellow packets of NutraSweet Raw ... a 4-calorie sweetner blend. A half hour after the show had started the marketing arm of the new colors were having problems negotiating red, yellow and green on the streets of Chicago. I guess over four days, missing the first hour of the show is not a big corporate deal.

On my way to see the Crocs folks I ran into Harvey Blonder of Buddy's Crabs and Ribs ... it doesn't matter what show I go to or what city it's in ... Harvey is a magnet for my camera ... if I don't run into him in the first hour of a show, it's not officially open yet.

And speaking of late ... but acceptable when you're a celebrity as people will wait patiently just to stare at you and get a signed poster, Mario Batali strolled into the Crocs booth with film crews, attendees, press and this fool surrounding the "work" shoe exhibit. I blew off the mini interview opportunity, took my foto and made arrangements to get the info on the Crocs e-mailed to me. Not such a glamorous reporting job, but it looks good in my first blog from the show.

The World Has Lost a Beautiful Person: Joan Hisaoka

The news of the passing of Joan Hisaoka, principal of Hisaoka Pubic Relations in Washington, has left me speechless and sad beyond my own comprehension. The Team at Hisaoka wrote a few words that give us all we need to know right now ... about this brilliant, beautiful woman. Our deepest sympathy goes out to her wonderful husband Marvin and the whole Hisaoka family.

As you may have heard, our dear friend Joan Hisaoka passed away last night after losing her tough battle against colon cancer, a recurring illness she had defeated before, and that we had hoped she would conquer again.

Ambassador Fernandez Introduces Chilean Cuisine in Celebration at Ceiba

I had a chance today to taste a preview of the menu being served as a special this week at Ceiba in Washington. Joining media and friends of the restaurant were co-hosts Gus DiMillo of Ceiba and Chilean Ambassador to the US Mariano Fernandez. Noted Chilean chef Pilar Rodriguez worked with executive chef Jeff Tunks and beverage manager Scott Clime to create the food and wine pairings that will be offered the rest of this week in the dining room as a prix fixe special for ($37 for the four-courses or $49 for wine pairings with the meal). Pilar told the group at the beginning that her mission was to keep the flavors distinct and the pairings complementary to make dishes that were naturals together.

My favorite was the seared scallop served with a pebre verde ... a chilled accompaniment that appeared to have cilantro, garlic, salt, chile and lime. The dish was bright with the acid of the pebre and a fresh perfectly cooked scallop. The sauvignon blanc from Haras de Pirque in the Maipo Valley is an unoaked delight on the palate ... crisp with a mineral feel, the wine is undaunted by the citric lime in the pebre. Before we finished we had tasted Umo honey from Southern Chile, sea salt from Cahuil in the O'Higgins region, lucuma (orange fleshed fruit), and carica, a cooked, preserved in a syrup Chilean papaya.

Jackson 20 With a Little Help from Kristina

People who know me know I can be overwhelmed with a great service experience. And a great experience doesn't mean it has to be someone who knows more about the food than the chef or that they can wait on six tables at once or that they can be a step ahead of my every wish. The ones I remember have a genuine sense of niceness about them ... service from a nice person in a nice place. That happened tonight at dinner at Jackson 20 in the newly refurbished Hotel Monaco in Alexandria. Our server was so pleasant, so helpful and just downright nice. I was stunned when I asked her a question about the buttermilk fried chicken and she told me it was a favorite since the chicken was so moist on the inside. That's not what threw me for a loop ... it's that after ordering, I asked if she was from the South. She told me where she was from and I couldn't understand her ... she had to repeat it to me three times as I tried to hear the name of a state or city ... she was telling me Bulgaria. "Oh, well you could be from southern Bulgaria" is all I could say. Kristina Ivanova (sorry about the quality of the foto, I wasn't expecting to take a picture so all I had was my iPhone) speaks spectacular English and has been here maybe 18 months. Is it national pride that we are a nation that only speaks English? It's a shame we aren't at least speaking Spanish, but that's another story.

Kristina is here for five years while she goes to school ... but another kicker is that she won the green card in a country lottery. I don't know any other details but a lottery? ... Wow!

Back to the dinner ... Jackson 20 is a pleasant, reasonably priced (say, not hotel pricing, but reasonable local dollars) and very Southern in concept. Cocktails are exceptional ... but it is the wine list that will blow you away for its generous consumer friendly pricing. Twenty wines at $20 with Virginia wines from Barboursville and Lake Anna included. When my wife told me they had Gruet sparkling from New Mexico on the list for $20 ... I said it must be half-bottles. Wrong, we're talking 750 ml.

The side dishes are mighty nice and I had to laugh when I saw my wife eating the Gouda scalloped potatoes and wilted spinach out from under a very nice ribeye steak. They were gone first and then she started on the beef. The sides were exceptional.

Jackson 20 is worth a visit and if you want to embarrass a nice person, ask for Kristina ... her brother and father come tomorrow to visit and she can probably tell you about that ... in perfect English of course.
