Eric Ziebold Wins Beard Mid-Atlantic Chef Award

Last year's winner Frank Ruta of Palena presented the 2008 Mid-Atlantic Chef of the Year Award to Eric Ziebold, CityZen. In an evening when glamour was added with the snagging of Sex and the City star Kim Cattrall to co-host the event with Bobby Flay, the night was still about the best of the food world in the spirit of James Beard.

Other local winners included Terry Theise as the Outstanding Wine and Spirits Professional and Central Michel Richard for the Best New Restaurant.

On a night when Thomas Keller said he felt relaxed as he was not being considered for any awards (he's won most of them) it is to be noted that two graduates of his French Laundry kitchen and 2005 Food and Wine Best New Chefs alums Lachlan Mackinnon-Patterson and Eric Ziebold both won Regional Chef awards.

It was also nice to see Frank Ruta up on the stage after last year's mixup when his name was dropped by accident from the announcement that he shared the Mid-Atlantic top chef award with R.J. Cooper of Vidalia. Eric gave him a generous acknowledgement and all is well again.

Giant Crab Buries Man In Sand and Escapes

While talking to one of the security guards on Friday morning at National Harbor along the Maryland side of the Potomac, I learned that the most asked question is, "Where can we eat?" Right now there is Potbelly, Sauciety in the Westin and the selections of Gaylord National. Well, on June 16 McCormick & Schmick's will open to satisfy that demand for some eateries outside the hotels.

To show off for the Yacht Show this weekend at National Harbor and to get ready for the restaurant opening, Jake the Crab dropped in from Portland to steal some of the camera time away from The Awakening

Hisaoka Introduces the New Westin Reston Heights

Reston certainly has grown up ... and it seems to know no limits to its ever expanding universe.

The folks at Hisaoka Public Relations pulled off another of their signature events ... this time introducing the community and media to the new Westin Reston Heights. I've been to more than my share of events and there is an agency style in the way events are handled that I can identify immediately. The Hisaoka team is bright, organized, right on schedule and works with a stylish sophistication that adds up to success. It was the Joan Hisaoka way before ... it's the Hisaoka Public Relations way today.

The hotel's dining room is the Vinifera Wine Bar & Bistro ... it looks like there's potential in the room and will be worth a return visit. I've added it to my address book.

Gluten Freebird: Glutenless Maximus in Washington D.C.

One of my writer friends and media dining partners just told me that she was recently diagnosed with celiac disease. She and I have dined together fearlessly ... no food issues here, just let the chef do his thing and we'll revel in the gastronomic euphoria ... and yes, the wine. Now her food world is topsy turvy, but as expected she has taken the aggressive path toward great dining without wheat. Instead of my usual response to dietary concerns (essentially a "not my problem" mode couched in some measure of tact), I've decided to get smarter. What are these diseases and allergies? What are the alternatives? What are restaurants doing about this? I've worried about my new role as a science writer as I attend conferences on sugar, sodium and whole grains -- am I really trained to understand what is going on here? Now, I'm moving away from silly worries and shifting into the research stage.

Vicki Griffith, the director of quality assurance for the Clyde's Restaurant Group was the first to open these sleepy eyes. She invited me to this great "safety" meeting of all the Clyde's restaurants where each unit made an original training video on dealing with allergies in their restaurants. I learned how seriously Clyde's takes this ... and what they are doing to be proactively sensitive and creative in their awareness of accommodating this growing segment of the population. As a judge, I sat next to a representative of FAAN -- the Food Allergy & Anaphylaxis Network and it is their Web site that I searched to learn what in the world is celiac and is it an allergy?

Here is what I found:

Celiac disease and wheat allergy are two distinct conditions. Celiac disease, or "celiac sprue," is a permanent adverse reaction to gluten. Those with celiac disease will not lose their sensitivity to this substance. This disease requires a lifelong restriction of gluten.

The major grains that contain gluten are wheat, rye, oats, and barley. These grains and their by-products must be strictly avoided by people with celiac disease.

WOW! Lifelong restriction of gluten. That's not ending anytime soon.

Well, my friend is now a Gluten Freebird and her new blog on dining without wheat in DC is fantastic. I'm learning and she is still dining ... I look forward to our next gluten-free dinner out on the food trail ... with a glass of wine, of course.

I'll Take the Check, Please.

This is a check that any of us would raise our hand for ... the winning check for the annual Maryland Hospitality Education Foundation car raffle. This year's winner is Doug "Buxy" Buxbaum from Buxy's Salty Dog Saloon in Ocean City. Each year the Foundation (I sit on the board) sells 325 tickets for $300 each for that shot at a Mercedes or the cash. If you take the cash it's a $45,000 payout ... and we get the rest to use toward programs and scholarships (we gave out over $32,000 to kids going to school this year) that benefit the youth who want to choose foodservice as a career.

It's always special when one of the nice guys wins. Congrats Buxy ... and enjoy!

No Diet Was Ever Ruined By One Cupcake

That's the mantra of Perfect Cupcakes owner Catherine Hamilton ... as she sets up her mobile cupcakes on the sidewalk at Pier 5 along the Harbor in Baltimore. Roaming the streets of Charm City on Tuesday, I ran into this delightful entrepreneur of what else but cupcakes. When you check out her Web site you even get a little ditty about the "cupcake girl." Who can't love to hear about a woman who "likes to bake cupcakes and wear tight jeans." Catherine tells me she wrote the song and a New Orleans singer/friend sings it. Cool.

When I stopped to talk to the cupcake girl, I found out that this was her first week on the streets of Baltimore ... after spending six months going through four departments of bureaucracy (you can never be too sure about the consequences of cupcake vending on the streets), Catherine is open for business ... at 2 bucks a pop, she's a bargain in cupcake world. You have to check out the girly signature cupcake ... the Pink Velvet with pink icing and pink cake.

The Perfect Cupcake is perfectly mobile ... with her little Indian vehicle and its lawn mower engine. Inside the built in racks line up the inventory in perfect order. Catherine comes from a retail background and every thing I saw had a healthy touch of marketing savvy. Since we're in week one, Catherine's hours are in that learning curve stage ... right now they are Tuesday - Sunday 11:30 a.m. - 7 p.m.

You can even buy the Perfect Cupcake shirt and hoodie ... like I said she's got that retail thing flowing through her veins ... but no tight jeans on Tuesday.

Take A Look at the 'Latest Dish'

The most read column in Foodservice Monthly is the one that belongs to the dean of reporting on the restaurant scene in Washington DC ... Linda Roth Conte. Before blogs, before the obsessive food network and reality television, before food sections became foodie world ... you know when it was a laundry list of homemaker recipes and grocery ads ... Linda was keeping tabs on Washington chefs and restaurants. What's cool is that Linda is just as relevant in today's world as she was 20 years ago (we don't count much beyond that). I thought as we put together the June issue, I would showcase Linda's column.

Tasty Trends Tea Off at NRA Show

Tasty Trends – the NRA Show Round-Up: The country’s largest restaurant show was buzzing with tea – hot tea, cold tea, flavored tea, fusion tea, organic tea, hand-crafted tea. Tea drinkers now have their day – or year at least – as tea drinks appear to be giving coffee drinks a run for the money. Thirty-two booths showcased tea, and more offered tea-making equipment. The PR firm (not mine) for Mighty Leaf Tea Company got my attention and my vote for best display. My favorite item of the show was a tie: Cholives – chocolate olives for chocolate martinis or dessert garnish, and Bagel O’s – pre-filled (think flavored cream cheese) bite-sized bagels that appear to be the quintessential bagel holes. The most useful item was the Wine Doggy Bag, especially since regulations in DC are changing so guests can take home unfinished bottles of wine in a sealed bag.

It’s official. The St. Regis Washington, DC has restaurant star power, partnering with internationally acclaimed chef, Alain Ducasse, to open “Adour by Chef Alain Ducasse” restaurant on property. Don’t try to translate into English, as Adour is named after a river in southwestern France where Ducasse was born. The St. Regis star power extends to New York-based award-winning architect, David Rockwell, and his Rockwell Group as the design firm for Adour. A September opening is planned.

Mauricio Fraga-Rosenfeld plans to expand his burgeoning empire when he opens Peruvian-themed Yaku in the Odyssey condominium building in the Courthouse Square sector of Arlington. Yaku, which means “water” in Quechua, the Inca language, will serve Chinese-influenced Peruvian dishes, called “chifa.” Chef Gisela Laos was imported by Mauricio from Peru where she ran a culinary school. Never one to be satisfied, he also plans to open in Glover Park’s Grog & Tankard space. Next on his list? A national rollout of a new concept – stay tuned.

Cure Bar & Bistro is the new name of the spot in the Grand Hyatt Washington hotel (not Ardenz which I had previously reported) where Butler’s Cigar Bar used to be. Cure is open and well.

Bill Thomas will open Breadsoda in Glover Park space on Wisconsin Avenue where my Bakery & Café used to be. Breadsoda is a slang term for beer. Guess what they will feature? Yes, beer , wine and coffee drinks –as well as sandwiches. Thomas also owns Bourbon in Glover Park and in Adams Morgan.

We’ve got all kinds of bars in this region – coffee bars, wine bars, dessert bars. Now we have a mozzarella bar. Chef Domenico Cornacchia, formerly of Café Milano, has opened Assaggi, an Italian restaurant as well as mozzarella bar – in downtown Bethesda where Centro used to be. The mozzarella is from California and (in the spirit of supporting local farmers) Virginia’s Blue Ridge Mountains, as well as Italy. Produce and meats are also from local farms in Pennsylvania’s Amish country.

Andy Seligman, owner of The Angry Inch Saloon in Adams Morgan is getting a fresh look as well as a new name. The popular bar will become True Story by mid-summer (according to plan) with a new décor by up-and-coming designer John Hutson, who also did the design for Seligman’s other place in Adams Morgan, Grand Central.

Fire and water translates to a new restaurant at an old firehouse. Old Engine Co.12 on North Capitol Street was sold to Brian Brown, who plans to turn the three-story 10,000 square-foot space into 2020 Martini. This is a concept developed by Twyla Garrett of Cleveland-based Garrett Entertainment Corp. Building renovation cost is expected to peak around $2.4 million, while another $1 million is slated to build the restaurant. The restaurant will be similar to Garrett’s Cleveland concept -- a restaurant and martini bar serving brick-oven pizzas, pasta and sushi. Sushi and pizzas will be served via conveyor belt. A coffee lounge is part of the formula, as is a rooftop deck. The 30-foot martini bar will have water running through it and fire atop it – hence the fire and water theme. An opening date has not been determined.

Ye old’ Childe Harold off Dupont Circle is now Darlington House. It offers an Italian-influenced New American menu. The upstairs salon focuses on dinners; downstairs street level (the cantina) includes an outdoor patio with deluxe bar fare. Owner Fabio Beggiato also owns Sesto Senso, Andalu and Cleveland Park Bar & Grill. He plans to open a third-floor library lounge that will offer cappuccino, pastries and WiFi.

Bodega, a tapas-focused Spanish restaurant, opened where Manhattan Café used to be on M Street in Georgetown. It offers tapas and traditional paellas and is owned by the same Moroccan family of the nearby News Café.

Learning how to cook is the first step, be it a profession or a hobby. That’s the plan for veteran L’Academie de Cuisine instructors Susan Holt and Susan Watterson. They plan to start their own school for the public, CulinAerie (pronounced “culinary”) this fall. The Logan Circle area facility will offer two kitchens with flat screen TVs and customized workstations. Will a “training restaurant” be the next step – a la the CIA?

Joan Hisaoka Memorial and Celebration Service

Today is the memorial and celebration service for Joan ... I am in Chicago and won't be able to make it back in time. But that doesn't mean I can stop thinking about her -- we never traveled together but we had some common experiences including Machu Picchu.

When I traveled to Iceland, I had an opportunity to see the northern lights one evening and took this foto handheld around midnight. I loved telling Joan about the experience and sharing my fotos with her.

There won't be any show posts today or any other for that matter ... this is Joan's day ... the show recap will appear tomorrow.

Here's that wonderful eskimo proverb again:

Perhaps they are not stars, but rather openings in heaven where the love
